THE JINGLE FIZZ
Ingredients & Method (for 2)
• 60ml Sloe Gin
• 60ml grapefruit juice
• 15ml simple syrup
• one egg white
• ice
• fresh thyme
• one tablespoon caster sugar
☛ Gently rinse the thyme with water and coat in sugar, shaking off the excess. Set aside for garnish. In a cocktail shaker, add all the remaining ingredients, adding the egg white last. Dry shake (no ice) for twenty seconds so the egg can get fluffy. Add ice, and shake until chilled. Strain into a champagne glass and garnish with thyme.
