HAVE YOU TRIED ABSINTHE THE PROPER WAY?

For years, Absinthe has been surrounded with myth - many people know of it as scary, hallucinogenic and illegal. Our goal in making our own was to tackle these conceptions and produce a complex tipple with botanicals touching the palate in delicate layers. Wormwood and aniseed come together, showing herbaceous and earthy characters and a touch of sweetness.

At our Absinthe Launch at White Rabbit Cocktail Room a few weeks ago, our head of production, Leo, was able to demonstrate the traditional French method of serving Absinthe.

Using an Absinthe fountain and a specialised spoon, slowly drip iced water over a sugar cube into a glass of absinthe. Move the spoon around so the sugar is always under the water until the sugar cube is dissolved.
